Oolong means "black dragon tea" in Chinese. It is a traditional Chinese tea that undergoes unique processing to semi-ferment the leaves. This produces a liquor with a character somewhere between black (fully-fermented) and green (unfermented) teas. It is popularly drunk at mealtimes as an aid to digestion.
